Bacon And Cheese Feast Bread

Here's how you can transform ordinary bread dough (recipe link for that below) into a fantastic feast bread loaf - designed to share with friends - just tear off a chunk and eat!
The Recipe
Ingredients:
- Basic bread dough (see here for the recipe)
- Bacon - a few rashers
- Cheese - as much as you like
- One small onion
- Fresh herbs - A sprig or two of Rosemary and Sage and a few Chives
- Olive oil - about a tablespoonful
Method:
Cut the bacon into pieces about the size of a postage stamp - lightly fry it so that it's cooked, but not crispy
Cut the onion into rough chunks and gently fry - just until it turns translucent
Cut up the cheese into small cubes
Chop the herbs into a bowl, add the bacon, onion and cheese - add about a tablespoonful of olive oil, then mix it all together. Cover with film and set aside
Make the Basic bread dough (see here for the recipe)
Preheat your oven to 180C (350F , Gas Mark 4)
After initial kneading and proving (leaving to rise), tear off small pieces of the dough and drop them randomly on a lightly-oiled baking tray. When you've used about two thirds of the dough, scatter some of the cheese/bacon/onion filling over the top
Add the rest of the dough - again, torn into pieces, then the rest of the filling
Bake in the oven for 20 minutes
Allow to cool on a wire rack for a few minutes before serving
Eat it with your fingers - just tear of a chunk and share it around
